How did you get started in the food truck industry?

I have a background of cooking in the restaurant industry, and I was in the finance industry over 20 years. I was inspired to get into the food truck industry as I could be mobile and attend various events where my unique food could be served. 


What inspired you to focus on Crepes for your food truck?

My focus gravitated towards crepes due to their distinctive and delectable culinary concept.


Can you share any unique or personal stories that influenced your food truck concept?

I was having breakfast with a friend and we both had crepes as it is one of her favorite types of food. At the time I was thinking about what a different type of food concept would be and thought of how great crepes are as they can be served as a sweet or savory type of food. 


Tell us about your menu’s standout dishes. What makes them special?


Among our sweet crepe offerings, the Patriot flavor garners significant popularity due to its delightful combination of Nutella, Strawberry, and Banana. Additionally, the Smores and Strawberry Cheesecake crepes hold a special place as cherished favorites. On the savory side, the Caprese is a sought-after choice, featuring Basil Pesto, Mozzarella, Spinach, Tomato, and Balsamic flavors. Customers also have the option to enhance this crepe with Prosciutto or Bacon. The Santa Fe Chicken enjoys its own following with its composition of tender chicken, Colby Jack cheese, onion, a rich green chili smothering, topped with crema and cilantro. Equally sought-after is the Turkey Club, a top seller that combines Turkey, Bacon, Colby Jack cheese, Spring mix, tomato, and Ranch dressing.


How do you source your ingredients for maximum freshness and flavor?

We source ingredients through local farmers markets when the ingredients are in season. 


Are there any seasonal items or limited-time specials on your menu that customers should look out for?

Starting from September and extending through December we offer the Harvest Apple Pie crepe becomes available. This delectable treat is crafted with spiced apples, graham cracker crumbs, and is crowned with a delightful combination of cinnamon sugar, caramel, and whipped cream.


How does your food truck contribute to the local community?

At Simply Le Crepes, we actively contribute to charitable events and schools as a way to give back to the community. Our commitment to making a positive impact drives us to participate in these initiatives, fostering a sense of support and engagement.


Are there any efforts your food truck undertakes to reduce waste or promote eco-friendly practices?

Simply Le Crepes uses biodegradable forks, knives, plates and napkins.


What does ethical sourcing mean to you and how does it reflect in your food truck’s offerings?

Ethical sourcing means to me that my business ensures that products used have a low carbon print and that we recycle plastics and paper products. We also source some of our products that are local and organic.


What are some challenges you’ve faced in the food truck industry and how did you overcome them?

Challenges I have encountered in the food truck industry include finding reliable assistance, dealing with mechanical issues of the truck, and balancing competitive pricing with profitability. I have tackled these challenges by recruiting enthusiastic employees dedicated to the food industry, providing them with fair compensation. Additionally, addressing mechanical concerns involves enlisting a competent mechanic and implementing regular preventive maintenance. To maintain reasonable pricing, I explore various food suppliers and local farmers markets to source quality ingredients at justifiable costs.


What do you find most rewarding about owning and operating a food truck?

The most rewarding experience about owning a food truck is receiving positive feedback from customers on how they enjoy the crepes from our truck.


Can you share any success stories or moments that have made your food truck journey memorable?

The key success factors for my food truck include building a strong base of repeat customers for catering gigs and consistently receiving referrals. These elements have played a pivotal role in driving my business forward.


Are there any exciting plans, expansions, or new menu items in the pipeline for your food truck?

 I have expanded to offering a crepe bar for weddings, corporate indoor events. I continue to create and add new crepes to the menu. I am currently creating more savory crepe options. 


How do you stay innovative and adapt to changing customer preferences?

I take customer feedback seriously and continue to add new crepe options.


What advice would you give to someone considering starting their own food truck business? Attractive Heading

I would advise them to research and acquire the correct permits and requirements that are needed for your local state or area. Do not expect to become an instant success, there will be difficult days but if you stick with it there will be better and successful days to come. 


What’s the most important lesson you’ve learned from your experience in the industry?

Be mindful when deciding which events to be a part of, and make sure to choose wisely by setting certain standards. It’s a good idea to establish a minimum requirement for participation. Keep in mind that catering events can often turn out to be really beneficial in terms of saving and making money.
